Summer Experiment

Summer Experiment opened in 2019 on the second floor of 77–79 Lý Tự Trọng and quickly became one of the bars that changed Saigon's cocktail scene. The room opens onto a small garden, and the mood is bright and fun, with some drinks served in watering cans.

The bar follows a 'farm to bar' approach, working with local suppliers and seasonal produce. The menu runs to about 30 creative cocktails, six lighter 'mood starters', 16 classics and three mocktails, alongside batch cocktails, wines, spirits and small sharing plates. Downstairs, COI is a jazz bar for later in the evening.

Menus change with the seasons, following the bar's 'farm to bar, bar to glass' thinking from sourcing through to the glass. It is lively and sociable, so better for groups and a buzzy night out than a quiet catch-up.
