
Brine is a small, minimalist bar on Nimmanhaemin Soi 5, with a black-and-white look, a bonsai and a counter clad in white ceramic grid tiles. As the name suggests, the team ferment their own brines from ingredients such as olives and watermelon rind.
The menu leans smoky, salty and sour. Brine is worked into classics such as the Negroni, daiquiri and amaretto sour, and house signatures include Brine Smoke and Botanical Bay; there are non-brine drinks too. Complimentary 'savours' such as dashi-marinated tomatoes and smoked olives arrive with your drink, and Japanese bar bites include smoked saba and miso-roasted mackerel. Cocktails start from about B380.
Brine opens from 6:30pm to midnight, and reservations can be made through Nightify. It suits anyone who prefers savoury, dry drinks to sweet ones.
