
The Bar at 15 Stamford is inside The Capitol Kempinski Hotel Singapore in City Hall. Rum is the star, for a historical reason: the site is said to have been home to Joseph Balestier, the first US consul to Singapore, who grew sugarcane and pineapple and made his own rum.
Time Out counts a little over 200 bottles of rum, one of the largest selections in Singapore, alongside other spirits served neat or in cocktails. The signature Plantation 1840 mixes rum with sweet vermouth, pineapple, sugarcane syrup, lemon and mint, and bar manager Edriane Lim has led the cocktail menu for several years. Bar snacks are served.
The bar opens daily from 4pm to midnight, and reservations are taken through SevenRooms. The modern, tiled room with its long counter is calm enough for conversation, making it a good City Hall pick for rum lovers and hotel guests.
