
Sago House was built by hand by founders Jay, Des and George, opened during the pandemic with no investors, and is now run by Dez and team. After losing its original space it moved to 37 Duxton Hill, and the Urbanlist notes the build uses around 80 per cent upcycled materials.
The defining feature is a cocktail menu that changes every week, so there is no fixed list of signatures; the team describes the result as "organised chaos". Alongside the drinks it runs events such as Zip Zap Talks and sells merch.
Sago House was No. 15 on Asia's 50 Best Bars 2024 and No. 56 on the 2025 extended list. The house rule is "leave the ego at the door", and the mood is informal, chatty and busy. Tables can be booked through SevenRooms, and Time Out lists it as open nightly from 6pm. Ideal for regulars who like something new each visit.
