Gibson is the Jigger & Pony Group's bar on the second floor of a 1930s heritage shophouse at 20 Bukit Pasoh Road. To find it, enter by the side door next to Humpback, walk past Live Twice and climb the stairs to a room with a green marble table and stained-glass windows.
Named after one of the classiest classic cocktails, the bar serves its Gibson at -15°C with Roku gin, a house ginjo sake-vermouth and a pickled pearl onion, with pickled condiments and a smoked quail egg alongside. The current menu, Timeless Chapter II, reworks familiar classics with Southeast Asian ingredients; Time Out singled out the MF ("made for fries") Martini from the previous edition.
The tone is serious about craft without being stuffy. Reservations are by SevenRooms, or call or text the bar. It is nearest Outram MRT (Exit 4) and stays open until 2am on Fridays and Saturdays.
