
Founded by Lee Watson on a quiet lane in Poblacion, The Spirits Library lives up to its name: floor-to-ceiling shelves hold one of Asia's most extensive collections of spirits, alongside vintage cocktail books, antique glassware and bar curios. Upstairs, the Detention Room keeps ultra-rare bottles and doubles as a cigar room.
Bartenders work behind a curved wooden bar, and recent menus draw on Charles H. Baker's 1939 travelogue, reworking vintage recipes with modern technique and Filipino flavours. Signatures include the Cavinti Fizz, Lintik Revival and Librarian's Julep; earlier favourites include the Bamboo Highball, scotch with a bamboo tea soda. Ralph Santos is senior general manager.
