AOKU is a bespoke cocktail bar on the second floor of Dahana restaurant on Jalan Petitenget, the first fine-mixology venture from Kaminari Group. Its name means blue in Japanese, and the room is designed as a calm counterpoint to Seminyak's louder nightlife, with a sweeping bar, leather booths and deep armchairs.

Japanese bartender Kensho Hirai leads the programme, describing it as a sensory exploration of stillness. Herbs, tea and coffee come from the bar's own garden at Bara Mountain Cabin in Jatiluwih and from local Bali farms. Signatures include So What, a coffee-and-spice tribute to jazz; Kind of Blue, pairing matcha with Nikka whisky; and Velvet Cherry, with cascara-infused brandy, cassis and oloroso sherry.

Refined Japanese plates are served alongside. Open Monday to Saturday, 7pm to 1am; book through the Kaminari Group website or WhatsApp.
