Ambar, meaning sky in Sanskrit, sits beside the Wantilan lobby at Mandapa, a Ritz-Carlton Reserve, on the edge of Ubud. The elegant, wood-lined space seats up to 60, and its outdoor deck and sunken lounges look west over the forested river valley, making it one of Ubud's best sunset spots.
The cocktail list is inspired by Taru Pramana, the ancient Balinese manuscript on the healing properties of plants, and uses local herbs, roots, barks and botanicals. Coconut-aged cocktails are finished tableside, and recommended drinks include the Yuzu Negroni, Cempaka Fizz and Mandapa Cobbler.
Food is Japanese-inspired, with sushi and sashimi, and afternoon tea runs daily from 2pm to 5pm. Cocktails start from Rp 185,000++. Book via SevenRooms, and arrive early for golden hour.
