The Savory Project was opened on Staunton Street in Soho in 2023 by the team behind Coa, as an answer to drinkers asking for cocktails that are less sweet. Guests gather around a hexagonal bar designed to put them in conversation with the bartenders, in a warm room of marble, metal and wood.

The drinks are culinary cocktails inspired by dishes and recipes, using Asian pantry staples such as ponzu, shiitake, miso, MSG and cumin. The Thai Beef Salad blends clarified peanut rum, beef essence, coconut water, bird's eye chilli and makrut lime, while the Biryani mixes ghee and biryani masala with tequila, plum, tonka bean and pineapple. There is a thoughtful range of non-alcoholic drinks too.

It won the Best New Opening Award at Asia's 50 Best Bars 2024 and ranked No. 32 on the 2025 list. It suits adventurous drinkers who find most cocktail lists too sweet.
