Quinary

Quinary, on Hollywood Road, is the long-standing flagship of mixologist Antonio Lai, the 2015 Diageo World Class Hong Kong and Macau champion. The room has an industrial look, with cement floors and retro lighting, and the long bar extends into Lai's lab, where a rotary evaporator is used to redistil and slow-cook the bar's own flavoured spirits.

The idea is multisensory drinking: flavour and aroma combined with unexpected textures, appearances and even sounds, using foams, airs and bubbles to give classics a fresh twist. The signature Earl Grey Caviar Martini, served with its caviar box, has become one of the city's best-known cocktails.

Quinary has featured on Asia's 50 Best Bars eight times, most recently at No. 26 in 2024, and Time Out gave it a Timeless Bar award in 2024. It is walk-in only, with bar nibbles to accompany the drinks.
