Penicillin, on Hollywood Road, is named after Alexander Fleming's antibiotic and the modern-classic cocktail, and its white-tiled interior looks half laboratory, half bar. It is run by Agung and Laura Prabowo, the team behind The Old Man, and was Hong Kong's first closed-loop cocktail bar.
The menu is built on local and upcycled ingredients, with organic ferments from a climate-controlled fermentation room nicknamed 'The Stinky Room'. Highlights have included Our Final Warning, with rotovap watermelon gin, omija vermouth and pink jalapeño-infused Campari. Through the 'One Penicillin, One Tree' project, a tree is planted in Borneo for every special cocktail of strawberry brine, coconut kefir and white chocolate-infused whisky sold. Even the tables are made from trees felled by Hong Kong typhoons.
Penicillin ranked No. 27 on Asia's 50 Best Bars in 2025 and No. 49 in 2026. There is also a kitchen for food alongside the drinks.
