
Coa, named after the blade used to harvest agave, is owner-bartender Jay Khan's intimate, candle-lit bar on Shin Hing Street in Sheung Wan. Its industrial-style room houses the city's largest agave collection, roughly 200 bottles of mezcal, tequila, raicilla, bacanora and other lesser-known agave spirits, and Khan has visited every distillery on the list.
Alongside rare-varietal mezcal served neat, the cocktails are bright and precise. La Paloma de Oaxaca, with grapefruit, mezcal and tequila, has been on the menu since opening, while the Smacked Cucumber pairs smoky mezcal and tequila with cucumber and a soy-forward Chinese salad sauce.
Coa was the first bar to be named No. 1 on Asia's 50 Best Bars three times, ranked No. 17 in 2025, and received the Legend of the List award in 2026. The team also runs Mezcal Mission tastings for charity and the nearby Savory Project.
